Of all the worldly experience you’ve gathered in life, what have you done that makes you an awesome planner?
I like to think that I am a citizen of the world!!!! I believe that all of my life experiences, from my background in journalism through to my adventures around the world help me to understand what each couple really want to achieve for their day!
…Oh and I’ve also planned my own wedding so understand both sides of the coin!

Of all the weddings you have attended, what is the most memorable thing you have ever witnessed?
Without a doubt in the world… Saying “I DO” at my own wedding! The day goes so fast, but nothing will ever match the feeling you have standing at the altar.

If you could plan a wedding for any two people in the world, who would it be for & why?

You’re headed to the beach on your day off, name 4 things in your beach bag. What’s your favourite?
My Bluetooth speaker and phone for great tunes! (Favs!), an icy cold beverage or two, a fabulous floppy hat and a stunning pair of sunglasses. I know that’s five things, but my be

The world is ending… what will be your last meal, where on earth will you eat it & with whom?
I would get my husband to cook an amazing meal in Paris – a little bonus of being married to a chef! And the meal…. Well that would be chef’s choice – I love a surprise!

You’re organising your own wedding cake, describe it in all its glory!
Easy – been there done that! Amazing wheels and wheels of fabulous cheeses!!!!

Of all the worldly experience you’ve gathered in life, what have you done that makes you an awesome planner?
With over 15 years in the hospitality industry, I’ve worked in and managing world renowned venues from, high end cocktail bars, nightclubs & restaurants through to function spaces catering for 1500 people. Opening 5 new restaurants in the UK and managing their events is a standout purely because they were unique events that had never been done before… not unlike a wedding!

Of all the weddings you have attended, what is the most memorable thing you have ever witnessed?
I can’t tell a wedding “best-of” story without including the story about the veil that would not behave in the wind no matter what & then it burst into flames from a candle at the altar mid ceremony. A close runner up was following a 10/10 morning wedding on Whitehaven Beach the weather turned and we had to outrun a massive storm  in sea plane!

If you could plan a wedding for any two people in the world, who would it be for & why?
Oh this is a hard one to answer…. I’m not particularly fussed over famous people…. so thinking about it more I would have to say my brother’s wedding. Simply because he is just the most amazing guy, but completely clueless and would have no idea the difference between his fingers or his toes.

You’re headed to the beach on your day off, name 4 things in your beach bag. What’s your favourite?
Good music, Ice cold cider, magazines (nothing too trashy) and my go pro for the turtles

The world is ending… what will be your last meal, where on earth will you eat it & with whom?
A seafood platter to die for!!!! And as I’m going to die, it had better be epic!! With whom?… If the world is going down, I’m going down with my amazing family and I’ll make it a last supper in the beautiful islands of the Andaman Sea in Thailand… Perfect.

You’re organising your own wedding cake, describe it in all its glory!
To be honest I’m a pretty simplistic when it comes to cakes but I do like more of the rustic look and feel. I’m loving the naked cake at the moment, with a white chocolate sponge and free form flowers consisting of Gardiners, Peonies, and Phallanopsis Orchids.

Helena

The undisputed queen of trinkets and the finer detail, Helena will make your wedding day a dream come true. Helena has an unbridled passion for all things weddings as she plans each detail of every wedding as if it were her own. Always composed and focused Helena will ensure the only blues are in the sky, the ocean and the thing after “something borrowed”

Of all the worldly experience you’ve gathered in life, what 3 things have you done that makes you an awesome planner?
I have worked in many different industries which has enabled me to gather a wealth of knowledge in communicating, working with and adapting to different people in different situations.
My family and my childhood which was full of fun and laughs has made me look at life and wedding planning with open eyes and to seek the best out of every situation and ensures everyone is smiling though the process.
And of course in grade 9 drama, for a term we went to ‘clown school’ and I learnt to juggle. Since then, I have taken this talent with me to juggle any wedding day hiccups, such a busted bustier, a broken heel or heaven forbid, no bottle opener!

Of all the weddings you have attended, what is the most memorable thing you have ever witnessed?
A caged butterfly release of 100 butterflies. They were kept a secret from the guests, then once the couple were announced as ‘Husband & Wife” their 2 kids opened the cages and the butterflies majestically flew out in a big cloud of colour above their heads and through their onlooking guests . It was quite spectacular!

If you could plan a wedding for any two people in the world, who would it be for & why?
Hudson and Jazz Paws, I think they feel disappointed with their permanent ‘always a bridesmaid, never the bride title’.

You’re headed to the beach on your day off, name 4 things in your beach bag. What’s your favourite?
Sunscreen, my ghostly white skin sizzles at the word ‘sun’. I would take my beach ball, just so I could ask everyone if they have seen my beach ball! An Esky full of Cider and a Cabana Boy.

The world is ending… what will be your last meal, where on earth will you eat it & with whom?
My last meal would be with Dwayne Johnson, we’d have a candlelight Aussie BBQ dinner on the top of the Empire State Building, just so I can shout out to everyone below….. “Can you smell what the Rock is cooking??”

I’d link to go with something very simple… *inhale*
A 5 tier multi-flavoured cake with frosted ganache icing in ivory with iced peonies cascading from the top of the cake and inscribed in the cake from top to bottom will be the lyrics from “I’ve had the time of my life” from Dirty Dancing and  the cake topper will be replaced with fireworks that will fountain from the top, timed to go off as the knife slices the cake for the first time.

Amanda

Of all the worldly experience you’ve gathered in life, what have you done that makes you an awesome planner?
I’ve studied fashion design, graphic design, architecture & interior design, photography marketing and project management due to my interest of design, management and passion for creativity – all field that can be well related to our fabulous industry – though let’s ignore the fact I’m yet to complete any of them! K I did however, complete a (short) course in Events Management.
Honestly, I blame my strong knowledge and understanding of weddings and events management as a whole, on working with my uncle for many years. Owner/Manager/Cook/Planner/Florist/Baker/Decorator/Bartender (the list goes on) of a large function and catering centre, he was an absolute stickler for excellent customer service and drove to deliver exceptionally high standards over all. Always going way out of his way to deliver ‘A’ class experiences to maintain excellent client relationships and a strong business reputation.

Of all the weddings you have attended, what is the most memorable thing you have ever witnessed?
It always comes back to theming with me – the way decorations/furniture is tied into the scenery.
My most memorable weddings were those that focused on creating an overall theme – and that followed it through to the finest detail, so much so that you lose yourself in it all!
Think; antique wedding at an old Victorian house, with lavish lace, detailed cutlery, fine china and delicate lanterns strung through-out old fig trees – OR! Simple beach wedding, sunken tables, cushions and bean bags on the beach, lit only by candlelight and torches. I’m either very dramatic or ultra-simple.

If you could plan a wedding for any two people in the world, who would it be for & why?
Me and Matthew McConaughey…. or me and Channing Tatum…. or me and basically any decent looking, intelligent, fun, guy with a skate/surf board. Because I’m single, der. PS: Know anyone?

You’re headed to the beach on your day off, name 4 things in your beach bag. What’s your favourite?
Cider, sunglasses, sunscreen and something to eat. Hmmm…. it’s a real toss-up. I’d probably rather starve than get burnt, squint or not drink. Inconclusive.

The world is ending… what will be your last meal, where on earth will you eat it & with whom?
Pig. Anything from that delicious creature. I would share it with myself. Pig is too good to share.
Or seafood feast.
Or a cheese platter. With cured meats. And olives. Make that an antipasto platter too.
Cake? Mm mm, caaaaake.
Seriously, I can’t think seriously because I’m hungry right now and everything sounds amazingly delicious and necessary. How long do I have to consume said meal…. is it three course or…..
